Ti Guan Yin, also known as Iron Goddess of Mercy. As one might guess from the name, this tea is something special. First of all it's an oolong. In fact, it's probably the most revered of all the oolongs. Second, it's a tea that's meant to be steeped repeatedly. You can brew this oolong up to seven different times and each time you'll get a different tasting cup. Truly a unique tea.
